North Indian Food cuisine is renowned for its richness and aroma with extensive use of whole spices, saffron, nuts, rich cream, milk and butter. I promise to share tips and tricks to make these delicious dishes quick and easy!

We will be making:

Appetizer - Hara Bhara Kebab with Mint Chutney
Kebabs have their origins in Middle Eastern cuisine are typically associated with meat. The prevalence of vegetarianism in India has given life to many vegetarian varieties.
In Hindi, Hara means “green” and bhara means “stuffing”. These deliciously soft kebabs are full of greens and flavorful spices, combined with potatoes. Served with mint or cilantro chutney

Main course - Shahi Paneer Makhani (Royal Butter Paneer)
Originating from the creamy delicacies of Mughlai cuisine (hence the term "shahi", a play on the word Shahenshah, the title of the Mughal Emperor), this dish is prepared by emulsifying tomatoes, onions, ground cashews, ghee and cream into a curry, with the addition of a variety of spices and cubed paneer. (I will share tips on how to make Butter Chicken using the same gravy)

Dessert - Badaam Sheera (Rich Almond Dessert)
The Mughals were known for their indulgent desserts, made with nuts, vegetables and flour, flavored with cardamom, nutmeg, mace and saffron. Badam Sheera or Halwa is a rich dessert prepared with almonds, ghee, milk, cardamom and saffron. Melts in your mouth, will leave you craving for more :)

Hi everyone, my name is Pooja. I am the founder of Varah Gourmet Luxuries. I am originally from Mumbai, grew up in Dubai and live in San Francisco.

I have been teaching cooking for over 15 years, have partnered with cooking schools in the Bay Area and Boston, and hosted classes for charities like CFRI (Cystic Fibrosis Research, Inc and NCL (National Charity League).
